Flax Butter Raw Apricot Energy Balls

  • Summer is finally here and what better way to enjoy it than by utilizing fresh ripe fruit in some sweet recipes. This recipe for apricot energy balls is a great afternoon snack and a great way to satisfy your sweet tooth. This is a completely raw recipe as well so no need to turn on your oven during the summer for this tasty treat! With just a few wholesome ingredients, these energy balls add some fiber, antioxidants, and omega-3’s to your daily diet that are sure to make any tummy happy.



    Ingredients:

    • 1 cup rolled oats
    • 1 cup dried apricots
    • 2 tablespoons O3 Superfood Stoneground Flax Butter
    • ¼ cup pitted Medjool dates
    • 1 teaspoon vanilla extract
    • ½ cup shredded coconut
    • 3 tablespoons of water or plant-based milk if needed


    Combine all the ingredients except for the shredded coconut and liquid of your choice into a food processor. Blend the ingredients until they are well incorporated and a sticky dough-like texture has formed. If the ingredients are sticking inside the processor, try adding the liquid of your choice a tablespoon at a time to help it blend more smoothly. Once desired consistency is reached, scoop a small amount of dough from the processor and roll into a ball shape. Repeat this step until all the dough has been rolled into balls. Finally, place the balls into a bowl containing the shredded coconut and roll to coat well. Eat and enjoy!


    Note: fresh apricots can easily be substituted for dried apricots if you prefer. We recommend not adding liquid to the mixture right away as the natural juice from the apricot tends to suffice quite well to keep the mixture from sticking.
